Cherry Jam
Found this recipe online. Loved it, but it only made 4 pint-sized jars of jam.
| 4 | c | Cherries, finely chopped |
| 1/4 | c | lemon juice |
| 1 | pkg | Pectin |
Put in 6-8 qt sauce pan. Bring to full rolling boil (cannot be stirred down) on high heat, stirring constantly.
| 5 | c | Sugar |
| 1/4 | tsp | Almond Extract |
Pre-measure sugar. Quickly add to boiling fruit mix. Bring back to full rolling boil and boil exactly 1 minute.
Pour jam into prepared jars. Place lids on jars, screw on ring, and turn upside down for 2 hours.
